The Huette plot, next to the Engelberg grand cru, on the south side of the Scharrach. Spontaneous fermentation, ageing in old Burgundy barrels from Méo-Camuzet — where Mélanie learned her trade. A pinot noir of altitude and light, closer to the Côte de Nuits than to the Alsace one imagines.
Tasting.
- Appearance
- Light, bright ruby, not deeply coloured.
- Nose
- Morello cherry, raspberry, a note of warm stone and sweet spice.
- Palate
- Fine and slender, silky tannins, freshness running through. Finish on red fruit and white pepper.
Food pairings.
- Roast poultry, guinea fowl, pigeon
- Fine charcuterie
- Full-flavoured fish — tuna, grilled salmon
- Young soft cheeses
The sommelier’s note.
- Temperature
- 14–16 °C
- Decanting
- Half an hour is enough
- Glass
- A large pinot noir glass, Burgundy style
Never at room temperature: above 17 °C the alcohol takes over and the finesse fades. Give it a spell in the fridge before serving.
