Demonstration page — the tasting notes and serving advice are drafts written to show the layout. To be reviewed and corrected by the estate before going live.
A crémant made like a still wine: single-plot, vinified with the same rigour as the estate’s other cuvées. The long ageing on lees gives it texture; the minimal dosage lets the terroir speak. Nothing masked, nothing sweetened.
Tasting.
- Appearance
- Very pale gold, with a fine, persistent bead.
- Nose
- White flowers, lemon zest, a hint of brioche from the lees ageing.
- Palate
- A straight, saline attack, creamy texture, long dry finish on fresh almond.
Food pairings.
- Oysters and shellfish
- Raw fish, ceviche, sea bream tartare
- Fresh goat’s cheeses
- As an aperitif, on its own
The sommelier’s note.
- Temperature
- 8–10 °C
- Decanting
- Not needed
- Glass
- A white wine glass rather than a flute — the bubbles show better
Serve cool but not ice-cold: below 8 °C the finesse of the low dosage disappears.
